Laura's Rolls


Ingredients:
1/2 cup warm water
1/2 cup warm milk
1 package of yeast
1/3 cup sugar
1 tsp salt
1 egg
1/3 cup butter
3 1/4 cup flour (about)

Directions:
Combine water, milk yeast and sugar and let sit until yeast is foamy. Add salt egg & softened butter & Mix. Add flour 1/2 cup at a time. The dough should be slightly sticky, but pulling away from the edges and easy to work with. Let dough raise for 45 minutes. Punch down and split into 2 balls. roll out into circles and spread melted butter on the top. Cut into pizza shaped slices. Roll from the thick end to the point so they look like crescent rolls. Set rolls on greased pan and let raise for 1 hour. Bake at 400 degrees for 11 minutes or until golden brown. Once you pull them out of the oven, brush them with melted butter.

Banana Cream Pie



1/3 cup flour
2/3 cup sugar (granulated)
1/4 tsp salt
2 cups milk scalded
3 egg yolks beaten
1/4 cup butter
1 tsp vanilla
2 or 3 bananas

Mix flour, sugar and salt. Add slowly to hot milk. Cook over medium heat, stirring for 1 minutes. Add small amount to eggs then pour eggs into milk. Cook, stirring over medium heat until thick and mixture mounds slightly. Remove from heat and add butter and vanilla. Cool but do not let set up. Pour into pie shell over bananas. Refrigerate. After set and add bananas and whipped cream.

White Chile

Ingredients:

1 lb chicken cooked and cubed
1 TBS vegetable oil
1 small onion, diced
6-8 small garlic cloves, minced
1 can diced green chilies
2 - 15 oz. cans white beans
3 cups chicken broth
1 tsp chicken bullion
2 tsp ground cumin
2 tsp oregano
1 tsp cayenne pepper
1 cup sour cream
chopped cilantro
Grated cheese

Directions:

Cook onion in vegetable oil with garlic until onions are tender. Add chicken, green chilies, white beans, chicken broth, chicken bullion, cumin, oregano, cayenne pepper. Let simmer for 2o minutes. Add sour cream right before serving and garnish with cilantro. Serve with Tortilla chips and cheese on top.

Chicken Parmesan Tenders



Ingredients:

1 lb chicken cubed (2 by 2 inches approx)
1/2 clove garlic, minced
1/2 stick butter melted
1/2 cup dried bread crumbs
1/3 cup grated Parmesan cheese
1 TBS parsley
pinch of salt, garlic salt, Italian seasoning, and pepper

Directions:

In a bowl combine garlic & melted butter. In another bowl combine remaining ingredients
Place chicken cubes in butter mixture then cover in bread crumb mixture. Place on cookie sheet. Drizzle remaining butter mixture over chicken. Bake for 15 minutes at 450 degrees or until juices run clear.

Poppy Seed Salad Dressing


I usually make this with a pear salad (pears, bacon bits, craisens, crumbled feta cheese, Romain lettuce)

Dressing Ingredients:
1 cup sugar
1 tsp dry mustard
3/4 cup oil
1 tsp poppy seeds
1 tsp salt
1/2 small onion finely diced
1/2 cup red wine vinegar

Combine ingredients and blend in blender. Toss with salad immediately before serving.

Olive Garden Bruschetta

Ingredients:

3 firm Roma tomatoes, finely diced
1/4 tsp salt
2 TBS grated Parmesan cheese
2 tsp minced garlic
2 TBS minced fresh basil
2 tsp diced marinated sun-dried tomatoes
pinch of dry parsley flakes
2 tsp extra virgin olive oil
1 tsp balsamic vinegar
9-10 slices Italian, Roasted Garlic, or French bread

Directions:

Combine tomatoes, basil, garlic, sun dried tomatoes, olive oil, vinegar, 2 TBS Parmesan cheese, and salt in a medium bowl. Cover and chill 1 hour.
When ready to serve - preheat oven to 450. Lay out the bread slices and spread olive oil on the tops. Combine cheese with parsley and sprinkle over bread slices. Bake 10 minutes or until crispy. Serve tomato mix over bread slices.

Peanut Butter Bars


Ingredients:

1 cup butter/margarine
1 cup sugar
1 1/2 cup brown sugar
1 TBS vanilla
3 eggs
1 cup peanut butter
1 1/2 tsp baking soda
3/4 tsp salt
2 cup flour, or more
3 cup oatmeal, or more
Peanut Butter for top
chocolate frosting or melted chocolate chips for top

Directions:

Cream together butter, sugars, vanilla, and eggs. Add peanut butter, baking soda, salt flour, and oatmeal. Spread in a large cookie sheet. Bake at 350 for 10-15 minutes. Do not over bake, just until lightly brown. Let sit for 10 minutes and then spread thin layer of peanut butter over top. When completely cool, frost with chocolate.
